Freezer Meal Recipes
If you’re looking for a way to save money and time, consider making meals you can freeze. Having dinner prepared and waiting for you in the freezer is a great way to cut the grocery budget. It will also save you time and effort in the afternoon. All you have to do is have some great freezer meal recipes and a bit of time and you’re all set to go!
One thing you should know before you start putting meals in the freezer is that not everything freezes well. Some recipes hold up to the freezer better than others. Some ingredients just do not do well when they are frozen and then defrosted.
If you are going to put time, effort and money into freezing your meals be sure to make things that will survive the freezer and taste great when it’s time to eat.
And don’t forget that freezer meals can be more than just dinner meals. Baked goods generally freeze quite well. Here’s a recipe for one of our favorite frozen pie recipes. Since it is served frozen, it can be stored in the freezer and pulled out for a party or unexpected guests.
The recipe makes 3 smaller (thinner) pies or 2 large pies (more filling).
Frozen Caramel Pie
2 deep dish or 3 standard graham cracker crusts (see note above)
8 ounces cream cheese, softened
1 can sweetened condensed milk
1 - 8 oz. tubs of Cool Whip, thawed
1 - 12 ounce caramel ice cream topping
2 cups shredded coconut
3/4 cup pecans, chopped
Toast coconut and pecans by spreading them out on a cookie sheet. Place under the broiler in the oven and monitor closely. You will start to see the coconut turn brown. Remove from oven and stir. Continue until all coconut is toasted. Be extremely careful and watch it - it burns quickly.
In a mixing bowl, blend cream cheese and sweetened condensed milk until most of lumps are gone. Fold in Cool Whip. Spread half of the filling in your pie crusts. Drizzle with half of the caramel syrup. Sprinkle on half of the pecan/coconut mixture. Repeat layers.
Freeze, uncovered, until filling is solidly frozen. Cover with foil and then freeze until serving time.
