Two Delicious Shrimp Salads
Lately I have added two great salads to my shrimp recipes book. Check them out as they are really easy to make and very, very tasty!
Curried Shrimp Salad
For this fantastic shrimp recipe you will need:
200 grams fresh uncooked shrimp
6 lettuce leaves (Iceberg)
1 chopped celery (fine)
1/2 cup mayonnaise
1/2 cup sultanas
1 can pineapple (better in chunks)
1 teaspoon curry powder
Put water in a pan and bring to the boil with a pinch of sea salt and a bay leaf. Boil your shrimp for 3 or 4 minutes or until pink. Place the shrimp on a plate and peel. Chop the rest of the ingredients, finely, and place in a large bowl. Mix them together with the shrimp and put in the fridge for at least four hours before consumption. It is delicious!
Shrimp Salad with Mango Dressing
If mango is not a fruit of your choice, you can use a similar one like papaya or passion fruit for this simple shrimp salad recipe.
250 grams fresh uncooked shrimp
Iceberg lettuce
1 mango, ripe
1 tablespoon chicken stock
1 can pineapple (better in chunks)
The juice of 1 lemon
1 cup chopped fresh tomato
1 medium red onion
1 fresh red chili
First, pure your mango (or fruit of choice), add the lemon juice and place in the fridge for 15 minutes. Then, put a large frying pan over a high heat and add the shrimp, chicken stock and chopped chili. It will be done when the shrimp turn pink. Place in a bowl and let it cool down. Add the chopped fresh tomato, red onion and pineapple chunks. Toss a few leaves from the lettuce in. To serve, drizzle the mango dressing over the mix.
I have made many shrimp recipes over the years and I always keep adding new ones to my book. One thing that I have learnt is to always buy fresh uncooked shrimp. I have been going to the same fishmongers for a long time, and they know I want only the best and so should you! I can assure you from experience it really does make a difference to your shrimp recipes if you cook it yourself. Do not let the thought of having to peel the shells off discourage you. Once you master the technique, it is very simple and a lot of fun. When you get used to cooking the shrimp at home you will never want anything else for your shrimp recipes. Needless to say: stay away from frozen. It pays off in the end if what you want is great flavors, great freshness, and great compliments for your shrimp recipes!
